One of the most primitive fish in North America, the paddlefish is a filter-feeding giant of the Mississippi River system and its major tributaries. With its distinctive paddle-shaped rostrum and shark-like body, the paddlefish can exceed 100 pounds and is pursued primarily through snagging, a unique angling method where weighted treble hooks are cast and retrieved through schools of fish. Paddlefish caviar rivals the finest sturgeon roe in quality.
